Since the early 90s, Burger King’s been touting they do burgers “your way right away,” but it wasn’t until the relatively more recent popularity of the likes of Subway and Chipotle that diners could actually oversee their food being made, requesting which toppings—and how much of them—to include.

Now Woodland Hills diners can add pizza to the list of foods they can make to order in that fashion. PizzaRev opens Wednesday in the Nordstrom Rack/Staples/24 Hour Fitness shopping center at Canoga Avenue and Victory Boulevard.

Nestled between Jamba Juice on one side and Gaucho Grill on the other, the 2,400-square-foot restaurant serves 11-inch pizzas with your choice of sauces and more than 30 toppings for just under $8. Or, if they’d rather, diners can order one of the restaurant’s “Our Way Pizzas” such as the Rev’d Up Meat & Peppers—which has olive oil, mozzarella, Italian sausage, crumbled beef meatballs and jalepenos—or the Skinny Margherita, which comes with reduced-fat mozzarella.

The restaurant is one of three in the chain, with the others in Northridge and Studio City, and is the brain child of Nicholas Eckerman and Jeff Zuckerman and their fathers, Irv Zuckerman and Rodney Eckerman.

Jeff Zuckerman said it’s fun getting to work with his and Nicholas’ father and see how they make their decisions.

“They have the benefit of having been linked in to a younger generation” by virtue of their previous career as co-CEOs of Clear Channel Music.

Perhaps it was this connection that lent itself to the modern, slightly industrial wood, glass and stainless steel atmosphere of the restaurant.

Patrons are first met with a big red dough press and a friendly pizza crafter on the far side of a glass divider. As they make their way along the counter, crafters add whatever—and as many–toppings diners request. The thin-crust pizza takes only three minutes to bake in PizzaRev’s state-of-the-art, open flame, stone-bed oven, which can reach up to nearly 1,000 degrees.

Jeff Zuckerman said the owners believe this type of food customization is a trend we’ll see more of, but for them, it’s more.

“It’s a whole ‘craft-your-own’ slogan, but it’s also an ethos. At the end of the day, yes, there are a lot of pizza options, but for us to be able to put our own twist on it was exciting,” he said. “We allow you to have a more adventurous experience.”

Overall, though, he said it comes down to the food.

“If you don’t enjoy the taste of the pizza, it ends right there,” Zuckerman said.

Because they don’t have control over which toppings diners choose, they have to make sure to provide quality toppings across the board. As well, Zuckerman touted PizzaRev’s trademark crust, which he described as having a “crunch with a chewy consistency.”

In addition to pizza, salads with any of the toppings are also available. Both craft-your-own salads and pizzas are $7.95. A one-cheese pizza is available for $5.95. Beverages, side salads, dessert pizzas and chocolate chip cookies are also available.

PizzaRev, located at 6439 Canoga Ave., Woodland Hills, is open from 11 a.m. to 10 p.m. Sunday through Thursday and 11 a.m. to 11 p.m. Friday and Saturday. The restaurant accepts all major credit cards.

It used to be a Kentucky Fried Chicken right there on the corner of Laurel Canyon and Ventura boulevards. “I don’t remember it, but it was a long time ago,” said Neighborhood Council vice president Lisa Sarkin.

But today it houses the largest stone bed oven in all of Los Angeles, according to chief operations officer Nicholas Eckerman of Pizza Rev, which is opening on Friday in Studio City.

Eckerman was excited to show around the new Pizza Rev restaurant that is having an invitation-only launch on Thursday night. It is a unique style of pizza.

Imagine this: your own private pizza with as many high-quality toppings as you want all for $7.95. Oh, and it takes two minutes to cook.

“You pick what you want to put on your pizza, and it’s all the same price, and that’s it, it’s yours.”

The family-owned craft-your-own style pizza first sprang up in Northridge, and they decided to give the Studio City location a try.

“We know the area, we like what is happening around here,” Eckerman said.

Yes, but two major pizza places opened within a mile in the past six months. That doesn’t bother Eckerman.

“We have quality ingredients, but it’s not at a gourmet price,” he said. The concept is a fast-casual pizza concept similar to the Chipotle model where guests are invited to “craft their own” pizzas with unlimited toppings for less than $8.

Irv Zuckerman and Rodney Eckerman (Nicholas’ dad) previously served as Co-CEO’s of Clear Channel Music, which was later acquired and became a part of Live Nation. At the time, Clear Channel Music had gross revenues of over $1.4 billion which included over $100 million in revenues generated from food and beverage sales. They opened their first pizza place in Northridge, and plan for expansion.

The pizza is made from fresh dough with a thin crust that is cooked in their 2.5 ton open-flame oven that can reach temperatures nearing 1,000°F.

They have a vegan menu and a Gluten-Free crust also available. Guests then have a choice between an Organic California-Tomato Red Sauce, a creamy Parmesan White Sauce, or a spicy-sweet BBQ sauce, followed by a choice of creamy cheeses including premium Mozzarella made with a kiss of buffalo milk, Ricotta, Feta, Bleuand Vegan Cheese. Unlimited toppings include a choice of three styles of Pepperoni, seasoned crumbled Meatball, and Fennel Sausage among others plus over 20 fresh veggie toppings including Arugula, Roasted Garlic, Kalamata Olives and Capers. A Dessert Pizza can be made with melted Butter, Cinnamon and sugary Frosting is topped with a choice of Chocolate, Raspberry, and Caramel finishing sauces.

“We know our pizza,” said Eckerman, who has worked in the industry for 16 years, since he was 15 years old.

Grand-opening Friday, September 21, PizzaRev serves thin-crust pizza using its own dough, fired in under three minutes through a stone-hearth oven, continuing the design-it-yourself pizza craze kicked off at 800 Degrees with the help of three sauce options, 20 veggies, five cheeses, and eleven choices of protein.

The chain’s owners have most likely watched The Jerk a few too many times, too, as they apparently offer a “pizza-in-a-bowl” option that lines your salads with a pizza crust bed.

PizzaRev is poised for a massive proliferation that will find it heading to Woodland Hills this November, a location that will be followed by a lot more of these suckers popping up around L.A. in the following months.

By Lesley Balla

Subway did it for sandwiches, and Chipotle did it for burritos. The idea that you can walk into a place, tell someone exactly how you want your food while walking down a line and have it made fresh in front of your eyes was a novel. Turns out it still is. Customized, hot-out-of-the-oven pizza is the next big trend here in LA – fresh dough patted out, topped with sauce and quality toppings of your choice, and then fired in a wood-burning oven only to be delivered in mere minutes from the time you ordered it.

But every pizza is customizable, you say. True. But these are fancy, wood-fired, artisanal pizzas a la minute. You get them by the time you make your way to the cash register to pay. Genius, really, as long as it works.

The Umami group’s 800 Degrees was the first to do this with its Westwood cafe. If you can break through the constant line, you’ll find some fine fired pies cooked in the signature oven, all taking just a minute to cook, coming out hot with bubbly ridges and toppings like rock shrimp, truffle cheese and capers. The plan is to open more both in and outside of LA (10889 Lindbrook Dr.; 424-239-5010).

Of course, this being LA, the land of trendsetters and followers, others are jumping into the same pool. Squid Ink tells us that Clusi Batusi opened on Sawtelle Boulevard in West LA, a new concept from first-time restaurateurs, including a chef who went to culinary school in Italy. He uses ingredients such as meatballs, balsamic mushrooms, octopus, sausage and asparagus for the 10-inch pies, and fires them in a 1200-degree oven (2047 Sawtelle Blvd.).

And last April, PizzaRev opened a “test kitchen” in Northridge, and is slated to open a new location in Studio City (12103 Ventura Blvd.) at the end of September. The pizza here has more of a thin crust and come out in under three minutes. There’s something for everyone, including vegan toppings and gluten-free crust, plus a dessert pizza with frosting and chocolate, caramel or raspberry sauce, and all are only $8 (9410 Reseda Blvd.).

Studio City’s “sushi row” might just take on the name “pizza row” as well. Pizza Rev, a “craft-your-own” eatery, is opening its second location on September 21 at 12103 Ventura Blvd (just west of Laurel Canyon). The first Pizza Rev is located in Northridge and opened this past April (as previously mentioned by MDF). This casual eatery is a pizza bar where you can customize personal artisan pizzas with a choice of multiple sauces, cheeses, and toppings. Their “Fire Deck” oven is on a super-high heat that cooks each pizza in under three minutes. Each pizza is $7.45 for unlimited toppings including all the traditional favorites, plus many gourmet options such as kalamata olives, artichoke hearts, capers, fennel, meatball, ham, sausage, bacon, and garlic chicken.

PizzaRev, a new Los Angeles-based fast-casual artisanal pizza concept from music industry moguls Irv Zuckerman and Rodney Eckerman, is on track to expand across Los Angeles County in the coming months.

The duo quietly opened PizzaRev Northridge in early April as an incubator “test kitchen” for the brand, and has watched the concept become a fast favorite among L.A. pizza lovers. Now, PizzaRev is poised to take the rest of Southern California by storm, gearing up to open several locations this year and next.

A grand debut will take place this fall on Studio City’s Ventura Boulevard at Laurel Canyon, as PizzaRev becomes the latest addition to Studio City’s emerging “Restaurant Row.” More locations throughout L.A. will be announced soon.

Anticipating the rapid expansion of fast-casual restaurants and an ensuing pizza craze, the PizzaRev concept is backed by longtime business associates Irv Zuckerman and Rodney Eckerman. They previously served as co-CEO’s of Clear Channel Music, which was later acquired and became a part of Live Nation.

At the time, Clear Channel Music had gross revenues of over 1.4 billion that included more than 100 million in revenues generated from food and beverage sales.

Before joining Clear Channel, Zuckerman co-founded Contemporary Productions in St. Louis, Missouri, and Eckerman previously served as president and COO of Pace Music and COO of SFX Music.

Zuckerman and Eckerman opened the first location of PizzaRev in Northridge, California, to tap into the college town’s vibrancy and built-in audience of students and locals. With PizzaRev, they have crafted a new fast-casual, artisanal pizza concept that is revolutionizing the pizza industry one pie at a time.

The value-oriented “Chipotle-style” concept features a price point that is among the most competitive in the market, with guests invited to mix-and-match without limit from a vast selection of fresh ingredients for an all-inclusive price less than $8.

Each personally designed, custom-crafted artisanal pizza is served fast and fresh, with a light, crispy thin-crust. PizzaRev’s state-of the-art, 2.5-ton open-flame oven can reach temperatures nearing 1,000°, enabling guests to create and enjoy completely customizable pizzas in under three minutes.

A design of stainless steel, wood, and glass lends a contemporary feel that is a bit industrial, cleverly simplistic and comfortable for all.

The PizzaRev experience begins with its signature, Roman-style thin crust featuring an original dough recipe, handmade daily on-site (gluten-free crust also available.) Guests then have a choice between an organic California-tomato red sauce, a creamy Parmesan white sauce, or a spicy-sweet BBQ sauce, followed by a choice of creamy cheeses including premium Mozzarella made with a kiss of buffalo milk, Ricotta, Feta, bleu, and vegan cheese.

Unlimited toppings include a choice of three styles of pepperoni, seasoned crumbled meatball, and fennel sausage, among others, as well as more than 20 fresh veggie toppings including arugula, roasted garlic, kalamata olives and capers.

A dessert pizza made with melted butter, cinnamon, and sugary frosting is topped with a choice of chocolate, raspberry, and caramel finishing sauces, delivering a sweet end to a delicious meal.
